Food Varieties

During expedition you will experience some of the food varieties that are mentioned below. Filipino traditional food: crab on coconut milk, Bicol express, salty fish, adobong pusit , mami soup, balut, chicken inasal. Malungay chicken tinola soup,sinigang fish soup, shrimp, rice, mongo, carabao, rice cake, cassava cake, buko pie, buko salad, tropical fruits: mango, jackfruit, rambutan, lansones, kalamansi juice. Spanish colonial food: adobo, caldereta, menudo, apretada, punchero, empanada, escabeche, callos, lengua, fabada, chorizo Bilbao, longaniza. Churros, turron, yemas. Chicharron, pandesal, avocado (Mexico). Indigenous food in Palawan : forest rice, cassava flour, sweet potatoes, fresh or salty fish, roasted spicy pig, seafood and shellfish, mangrove crabs and seasonal fruits. Barako coffee, black ants honey, native bees honey, native chicken and native black hairy pig. Not allowed: monitor lizard, tarantula, dog and snake. Chinese foods: pancit canton, noodles, tea, ginger roots, steamed buns and rolls (siomai, siopao), roasted duck, swift nest soup. Batchoy, hopia, kiampong, Kikiam, lomi, lumpia, Shanghai, machang, maki mi, mami soup, Taho, goto, bicho-bicho, tikoy. Muslim food: bamboo smoked tuna and glutinous rice (dodol), vegetables with guinamos ( salt fermented fish), chicken stewed in coconut milk, turmeric and a paste called palapa. Also chicken curry with palapa. Goat meat stewed in spices and served with crab rice, satti with skewers of beef, chicken or liver laden with spicy sauces.

Activities and Beach Delights

We are well aware of the breathtaking beauty of our coral reef, and we love to share it. And to do it to the best of our ability: that’s why we choose the best spots, we visit them when few other boats are around and also we equip our guests with good quality snorkeling gear and enough time so they have the opportunity to maximum enjoyment. Out guide has been trained to show and tell the different species of fish and how they interact with their environment . This way you will see the way of life of the clown fish and their host the carpet anemone, or the goby and it’s host tunneling shrimp, or the cleaning wrasse and everyone around it. Having and sharing a little booklet on the fish around it's one of the most useful tools too, perfect for review and maximum understanding of the reef interactions. We guarantee that you will see and appreciate our reef like you have never done before.

Food Blog

We understand food as the expression of the community’s history together with their environment. When we prepare the daily nourishment we think not only in maximum quality and the happiness of customers, but also as an opportunity to enjoy as a cultural experience. Each one of our meals will present one or two dishes inspired in the people’s that have populated our land through centuries and left their imprint in our national food indeed. Because of this, the meals on the expedition do follow a couple of aims: 1. Locally sourced and collected from non depleted environs. 2. The meals would be culturally coherent with the local traditions of the peoples of the Palawan archipelago: Malayan Filipino, indigenous tagbanwa, indigenous badjao, colonial Spanish, Chinese mestizo and Muslim malayan cuisine.
